In terms of camera mount, I combine the simple "bike handlebar mount" with a CF 1m long tube with a PVC tube attached to the spi pole with hose clamps. Electrical tape protects the spi pole, and also covers the clamps to avoid snags.
The PVC tube is shimmed so that the camera is high enough to see the tiller crossbar. The tiller crossbar has strips of white making tape. With all those things in place, you can see the helm action in detail in the resulting video.
